The Glass Cat is a scratch kitchen and bar built for people who believe great food is worth the drive. Located in Bonner Springs, Kansas, serving breakfast, lunch, brunch, cocktails and hospitality with a little more personality than most places are willing to risk. Everything we do starts with real ingredients, real cooking and the belief that comfort food can be thoughtful without taking itself too seriously.
We are not a diner and we are not fine dining — we're an elevated roadhouse and destination where handmade biscuits, ambitious sandwiches, strong drinks and memorable experiences all belong at the same table. The Glass Cat is a little nostalgic, a little rebellious and proudly independent.
Whether you're joining us for a quick breakfast, a long lunch or a round of cocktails with friends, our goal is simple: we make the trip worth it.
Chapter 01 · The family
Founded by the Cashions.
Glass Cat was founded by Stephanie Cashion and her husband Pat, alongside their son Samsen. The three of them set out to build a restaurant in Bonner Springs that felt familiar and unhurried — a place where breakfast actually tastes like someone made it for you that morning, because someone did.
Chapter 02 · The food
Whole ingredients,
made fresh daily.
The foundation is our biscuits and gravy. Three-ingredient buttermilk biscuits, baked fresh every morning. Pork sausage gravy mixed and thickened by hand at the start of each day. Never canned. Never powdered. The same care goes into everything else we serve — from the breakfast plates to the cocktails and seasonal specials.

Training the next generation.
We're proud to employ and train local cooks and servers — most of them young, many at their first real kitchen job. Glass Cat isn't just a restaurant; it's where a handful of people learn the craft. That's part of why we do this.
